| Faaabulous Olive Oil and Honey Wheat Bread
Mix: 5 C warm water 2/3 C olive oil 2/3 C honey 5 t sea salt 2 T yeast 1-2 C whole wheat flour
Let sit till it just feels right.
Add enough whole wheat flour till you approximately have 11-12 cups in there.
Let sit 5 minutes to absorb the liquid. I don't know if it's true that whole wheat takes time to absorb, but it sounds plausible, and my bread has been turning out amazing since I started doing that.
Knead and knead and knead and knead. Preferably have a mom-in-law that will give a bread kneader thingy, that's the best way.
I know you THINK more flour = better, but it's not true! You choke your bread and leave it gasping for water. Who wants heavy, dry bread?
Once it's kneaded to perfection, or your arms feel like jelly, or the baby starts crying, put it in an oily bowl in a slightly warm oven, and set the timer to 1 hour or you'll forget about it.
After an hour, punch down dough and really savor the fun of that. Split into 4 portions, and don't worry about perfection: just immediately eat whichever loaf turns out the smallest and least sandwich-worthy. Hot from baking with butter: that loaf will be the best of all.
Flatten, squish, and roll out into a big rectangle, then roll and tuck it up into a pretty little loaf. Put them into greased loaf pans.
Let rise for a 1/2 hour.
Bake for 20-30 minutes at 375 F.
